'Sukhiyan' is boiled green gram balls with jaggery coated with batter and deep fried in oil.

Served as a snack in South India, it is a healthy, protein & iron rich fare.

Ingredients:    
Green Gram : 1/2 kg
Jaggery : 1/2 kg
Maida Flour : 1/4 kg
Grated Coconut : 1 cup
Elaichi (cardomom) : 5

Preparation:

Cook the green gram well with enough water. If you are using a pressure cooker, cook for about 3 whistles. Take a kadai, put the jaggery, pour 1/2 cup of water and melt the jaggery.

Then add the cooked green gram and coconut into the jaggery, add some elaichi too. Knead these ingredients together into a paste consistency, make small balls and keep it aside.

Take maida (refined flour), add some water and stir well. Dip these balls in the maida batter and deep fry in oil.

The crispy sukhiyan is ready to eat. Serve hot.

One variation you can try is without making balls or deep frying, enjoy the mixed ingredients as such. This is known as 'sweet green gram sundal', another popular snack, unique to Tamil Nadu.
