Cheese Pizza Muffins

Ingredients:    

All Purpose Flour 

- 2 1/2 Cups

Baking Powder  

- 1 1/2 Tsp

Egg

- 1( Lightly Beaten)

Capsicum

- 1 Small

Olive Oil

- 1/3 Cup

Milk

- 1 Cup

Grated Cheddar Cheese Or Any Cheese Will Do

- 1/2 Cup
  - 1/2 Cup (Seeded Halved)

Extra Cheese

- For Topping

Oregano 

- 2 Tsp

Method of Preparation:

  1. Quarter capsicum remove seeds and membranes. Grill capsicum, skin side up, until skin blisters and blackens. Peel away skin, cut capsicum into strips.
  2. Sift flour + baking powder in a large bowl, stir in egg, milk, oil, cheese,  olives,tomato sauce and oregano.
  3. Spoon mixture into greased muffin pan, top with capsicum strips, springle with extra cheese. Bake in moderately hot oven about 25 mins or until done.

Common oregano is botanically known as Origanum vulgare, Greek for "joy of the mountains." It can be found growing wild on mountainsides of Greece and other Mediterranean countries where it is an herb of choice. Also known as wild marjoram, the oregano plant is a perennial which grows up to two feet tall and bears tiny leaves which lend a pungent aroma and strong flavor to a variety of savory foods.
