Cooking Method
Wash and clean the chicken with turmeric powder, salt and vinegar, then rinse off the mix from the chicken. Now marinate the chicken with the Mandi powder and salt for an hour.
Mandi powder is made by grinding cumin, clove, cinnamon, black pepper, dried ginger, turmeric and coriander powder. The quantity of the ingredients is shown in the second picture, which you can enlarge to see.
You can fry the onions at this time.
Now pour a glass of water in a pan in which your gonna cook the chicken, add the chicken in the water and cook on high heat for a few minutes. Take the chicken out of the water and fry the chicken in oil till golden brown. Keep the water in which the chicken is boiled aside, for later use. Now we will heat the coal and keep it in a small bowl of oil and set it the middle of the dish where the chicken pieces are kept. Put the coal on top of the oil it will quickly smoke out, cover the pan and allow the smoke from the coal to seep out and smoke the chicken pieces. This will give a nice smoky smell and flavor to the chicken.
Add rice and salt to the water in which the chicken was cooking, add a bit more water to it and bring to a boil and let the rice cook through. When the rice is cooked, plate up and put the chicken on top of the rice followed by the fried onions.
