Unniappam / Neyyappam

Unni appam is a traditional Kerala sweet snack made from rice, jaggery, banana, roasted coconut pieces & sesame seeds, deep fried in oil.

A special Appam maker is used to fry Unniappam.

Ingredients:    

Roasted rice flour

- 200 gms

Mashed bananas

- 200 gms

Jaggery broken into small pieces

- 200 gms

Coconut milk 

- 4 tbsp

Cardamom powder

- 1 tsp 

Coconut pieces

- 2 tbsp
Ghee - 2 tbsp 
Salt - 1/4 tsp

Method :

Mix rice flour, jaggery pieces and mashed banana,coconut milk and salt.. Use a hand mixer to mix thoroughly .Fry thinnly sliced coconut pieces in ghee.

Heat the Unniyappam pan,and pour oil into it..When the oil is hot,reduce the heat to medium and fill with the batter upto a little more than 3/4th full.Allow it to cook slowly until done.Do not cover the pan.

When one side is done,flip over to the other side and cook.

Cook until both sides are golden brown in color.Remove and drain it to a tissue paper.Serve hot.

I want to know if I make the unniappam now up to till date it will last beacause we are using bananas.

Those unniappams sure look tasty. I have tried making appams, but the batter sticks to the appakaram and I am aunable to make appams. Can you tell me why it happens? reply to pvkshema@gmail.com
