Mint Chicken

A healthy low fat dish by Chef Ratheesh Nair.

Chicken is cooked in Mint sauce which is good for digestion and controls bad cholesterol.

Ingredients :

Vegetable Oil - 2 tsp
Garlic - 1 tsp
Ginger - 2 tsp
Onion - ¾ th cup cubed
Green chilly - 2 tsp
Capsicum - few pieces
Carrot - few pieces
Brinjal - few pieces
Chicken cubed - 1 cup
stock - as required
Mint Paste - 2 tsp
Salt -  
Black Paper - 1 tsp

Cooking Method :

Lets prepare it... Turn on the flame.. to hot pan pour some vegetable oil around 2tbsp. When the oil is hot add chopped garlic, ginger. Saute the garlic and ginger well until it becomes slightly brown. Add few cubed onions. saute till the color changes, golden color but dont cook too much also.. To this add green chilli , sliced carrot, capsicum, brinjal.

We are just doing half cooking. In fusion cooking we dont cook much.To this we will add diced chicken. For vegetables we will pour little stock water. Now both vegetables and chicken will be cooked well in this stew, this chicken stew will give it a chicken flavour..

We have made a paste out of mint and vegetable oil... when we add mint paste we will get a nice flavour of chicken and mint.. Now put required amount of salt to it. Add some crushed black pepper to it...

This is a very healthy low fat dish, we use vegetable oil that too in a small amount. It has ginger, green chilli and mint, mint is good for digestion and cholestrol.. When chicken gets cooked in mint sauce it will get its taste and flavour cook till gravy thickens. As you can see lots of vegetables in it with chicken. We will garnish it with mint leaves, sesame seeds - which is also good for digestion..
