Diamond Cuts

Ingredients : 

All purpose flour / maida - 2 cups
Egg - 1/2 of an egg beaten well
Water - around 1/4 to 1/2 cup to make a smooth dough
Salt - 2 pinches
Cardamom powder - 1/4 tsp
Ghee - 1 tsp
Oil - for deep-frying
Sugar - 1 cup
Water - 4 tsp

Method of Preparation:

first Mix flour, salt, cardamom powder and ghee along with enough water to make a smooth dough. Knead well, to mix all the ingredients together. Now keep the dough aside for about 15 minutes. Then Divide the dough into small balls and start working on one ball at a time. Now with the help of a rolling pin, flatten the dough ball into a thin circular shape. Make slanting cuts with the help of a sharp knife. Repeat the steps for rest of the leftover dough balls.

Heat a wok with enough oil and fry the cut out pieces, few at a time. The cuts will puff up and the edges will start browning. This is the perfect time to take them out of oil. Drain them onto a metal strainer.

In a pan, heat water and sugar on a medium flame. Keep stirring till you get a threadlike consistency. Add the cuts into the pan. Coat the diamond cuts with the sugar syrup and drain them using a slotted spoon.

Now serve them onto a plate.
