Egg Banana Cake

Egg banana cake is a simple recipe that is similar to a richly made plum cake with special seasoning using bananas and nuts. This recipe requires no oven and can keep your guests wanting more and guessing for its secret recipe.

Ingredients :

Eggs - 3nos
Sugar - 5 tbsp
Coriander powder - ½ tsp
For Seasoning    
Plantain Banana - 2 no
Ghee - 2 tbsp
Cashew nuts - Handful
Raisins - a few

Cooking Method :

Boil the bananas in a pressure cooker by adding a little water and pressure-cook for around 10-15 minutes. Chop the cooked bananas into 1/8-inch slices. Now lets fry the bananas. Heat 2 tbsp of ghee in a frying pan under medium flame. Once the pan gets heated up, add in the formerly chopped bananas along with cashew nuts and raisins and fry for around 10 minutes. Keep aside for later use.

In a glass bowl, break 3 eggs and continue to beat until it blends well. You can then add sugar into it around 5 tbsp and ½ tsp of coriander powder for better flavor and continue to beat well. You may then transfer the beaten egg mixture into a pan and then add the formerly made banana nut mixture over the egg mixture as seasoning. Now that our banana cake mixture is ready lets pressure cook the mixture. Add 1-2 liters of water into the pressure cooker and place the pan with the cake mix inside. Make sure that the pan is placed high enough that the water does not boil over the cake mix. Cook for around 25-30 minutes.
