Cooking Method :
First we will pour two teaspoons of coconut oil into the pan. Next we will add two teaspoons of fenugreek seeds. When smell of Fenugreek seeds emanates after it splutters, we will add urad dal. Two teaspoons of Urad dal is needed for one cup of rice. As we have taken two cups of rice, lets add four teaspoons. Add 6 red chillies, but if you want it more spicy add two more chillies.
Meanwhile, soak rice in water for 4 hours. At the same time soak tamarind, salt, turmeric powder and jaggery. Soaking helps to blend it easily using blender.
Fry the fenugreek, urad dal and dried red chillies till you get its flavour. Put off the flame when it turns brown. Now add cumin seeds two teaspoons, coriander seeds four teaspoons. Now add half cup of coconut to it. We will shift this fried items to a blender. Just powder it, after that add the soaked tamarind - jaggery mixture to it. To this add soaked rice just turn on the blender and mix it well. As it is soaked it will blend easily.
Our dosa batter is ready. You could add chopped spinach leaves to the batter. This is a very nutritious dosa. Heat pan, gingelly oil is the best to make this dosa. Variation of the recipe adding Bananas:
Another recipe using the same uppu puli dosa's batter, is adding bananas to the batter. Dilute the batter by adding some water & dip round banana pieces (Here nenthran or ethappazham 2 in number is used) in the batter. Instead of banana we can also use tapioca, potato, onion etc.
Keep banana pieces on the tawa closely, pour ghee on top. It takes 5 minutes to cook one side so you have to wait a bit. Turn over and cook for a few seconds, and your banana uppu puli dosa is ready to taste. If you put it on high flame it may burn. Use ghee instead of gingelly oil when you use bananas. Only Puzhukkalari (Matta or chambaavari or parboiled rice) sold as Idli rice should be used for making Uppu puli dosa.
