Cooking Method :
To begin with, place a large skillet under medium flame. Heat ½ cup of Coconut Oil along with 2-3 tsp of Fenugreek seeds. Gently mix thinly chopped Ginger and Garlic and continue sauteing. Once the condiments turn golden brown, add Green Chillies and Chopped Onions into the skillet. continue sauteing untill the raw smell goes off. To this add Turmeric Powder and Kashmiri Red chilly Powder.
You may add water to avoid the masala from getting burned. Now pour Tamarind Soaked water into the recipe in order to give a sour taste to the curry. If required you may add a little more of water into the curry. Add Soaked Malabar Tamarind to the curry. add salt to taste.
Let the curry boil, now add the Modha Fish into along with curry leaves. Let the water evaporate for 10-15 minutes and let the curry thicken.
Now lets add some Coconut milk into the curry as it gives nice white colour and flavour to our recipe.
Finally add cubed Tomatoes and let the curry boil for 3-5 minutes.
