Tomato Curry

Ingredients:    

Tomatoes

- 6 medium size

Coconut milk

- 2 cups

Onion

- 1 whole chopped lengthwise

Red chilly powder

- 1/2 tsp.

Oil

- 4 Tbsp

Turmeric

- 1/4 tsp

Mustard seeds

- 1/2 tsp

Salt

- 1tsp.

Urad dhal

- 1/2 tsp

Onion

- 1 Tbsp (crushed)
Cumin seed - 1 tsp. (crushed)

Method:

Heat oil in a saucepan and add mustard seeds and urad dhal. When urad dhal turns into golden brown, add the chopped onion. When onion turns translucent, add chopped tomatoes.

Continue sautéing tomatoes for 10 minutes. Then add coconut milk, red chili powder, turmeric, salt, crushed onion and cumin seeds. Heat till the water evaporates.
