Cooking Method :
Marinate chicken Pieces in masala prepared by blending Corn Flour, Garlic, Garam masala, Red Chilly Powder, Thinly Chopped Ginger, Turmeric Powder, Salt, Coriander Leaves, Mint leaves, Curry leaves, eggs, Curd and half a tsp of salt for a minimum of 2 to 3 hours or overnight in the refrigerator.
Place the marinated chicken pieces in a pan along with the diluted marinade sauce and cook for 10-15 min or till its three fourth cooked. This is done in order to soften the chicken pieces. Remove chicken pieces from the pan and keep aside. The left over Masala is mixed with all-purpose flour to form thick sauce. Again marinate the cooked chicken in the thick masala as it helps to form a crispy crust on your spicy Fried Chicken.
Heat oil in a cooking pan; add the masala coated chicken pieces along with any left over gravy and fry evenly on both sides. Finally your South- Indian fried chicken is ready to serve. You can serve the dish with white steamed rice or rotis.
