Aloo Paratha

Aloo parathas or rotis stuffed with Aloo curry is a delicious option for a healthy meal.

Stuffed Aloo paratha is an Indian recipe and one of the most popular Punjabi breakfast dishes... Parathas are basically unleavened dough stuffed with a spicy mixture, which is rolled out and lightly fried on a griddle.

Ingredients : 

Whole Wheat flour or atta - 1 cup
Milk - 2 tsp
Salt -  
Warm water and oil - as required
For stuffing we need:
Boiled and mashed potato - 1 cup
Turmeric powder - ½ tsp
Red chilly powder - 1 tsp
Coriander leaves -  
Cumin seeds - ½ tsp

Method :

To a bowl add wheat flour, some salt, 4 tbsp of warm water and mix well. Then add some oil followed by milk, mix it thoroughly to form smooth yet slightly firm dough. Keep it aside for about 10 mins.

Meanwhile in a hot pan, pour some oil, splutter cumin seeds and coriander leaves followed by mashed potatoes. Add little turmeric powder, chilly powder and some salt and mix well so that no lumps are formed, now off the stove and transfer the contents onto a plate. Make medium sized balls out of the mixture.

Now take the dough and slightly shape into circles by using a chapatti roller. Make medium thick dough circles so that it won't crack when binding. Now place the formerly prepared masala ball at the center of the sheet folding it from all sides, proceed to seal at the top.

Now carefully roll the dough into round shape. Don't worry if the potato leaks out of the sides or is visible on top of the dough while you're rolling it. This happens and is quite all right to begin with.

Place the tawa on fire and when it gets heated up, drop the paratha and cook until brown spots appear on both sides. Sprinkle some ghee for extra taste. Transfer onto a plate and enjoy the scrumptious treat.
