Cook potatoes, peel and cut each into 4 pieces. Grind ginger and garlic and keep aside.
Heat ghee, add fenugreek leaves, chilli powder, turmeric powder, green chillies, ginger-garlic paste and salt. Sauté well on a low flame until it turns brown. Add potatoes and fry well. Remove from fire and serve hot with paratas, raitha(salad) and rotis.
