Cooking Method :
Pour 2to 3 tbsp of oil into a pan on a stove, keep the flame at medium mode. Add sliced Okras into the pan and sauté and fry for around 6-7 minutes. Keep aside the fried Okras for later use.
Now lets prepare the gravy for the recipe. Place another heavy bottomed pan on medium flame. Add 2-3 tbsp of oil, add chopped onions and keep sautéing until the onions turn golden brown. You may now add chopped tomatoes into the pan along with cubed capsicum and continue sautéing. Add Ginger Garlic paste, when the rich aroma emanates, add peanuts into the pan along with the formerly made fried Okra's. To spice up the recipe, add in Red chilly powder and salt and continue to mix well. Later add a glass of Coconut Milk and mix well. Close the pan with a lid and let it cook for at least 5-6 minutes. Your African Okra curry is ready to serve.
