Maladu is a protein rich, melt in the mouth, south Indian Laddu made with roasted gram dal.

A favourite cuisine of the Konkanis, it just takes about 5-10 minutes to make Maladu.

Ingredients :

Gram dal - 3 cups
Sugar - 2 ¼ cups
Cardamom seeds - ¼ spoon
Ghee - 3-4 tbsp
Milk - ½ cup
Cashew nuts - 10 nos
Raisins - 10 nos

Cooking Method :

Heat gram dal in a pan for a few minutes. Make sure that the dal does not change colour. Cool & powder the roasted gram dal in a mixer jar. Now empty the contents to a bowl and add 2 ¼ cups of sugar in the mixer jar, grind along with cardamom seeds for flavor. We'll get fine white powdered sugar.

Now add a little of powdered sugar over the gram dal powder and mix with a spoon. Pour 3-4 tbsp of hot melted clarified butter or ghee on top of the mixture and mix well. Little by little add the rest of the powdered sugar to the mixture and pour a little of warm milk in order to make the mixture a bit smooth. Now let's add pieces of cashew nuts and raisins into the mixture and mix it well. When it is still hot but cool enough to handle with your hands, shape balls of similar size. Your Maladu is read to serve.

Maladu is a rich evening snack for children… It is made during festivals as well.
