Cooking Method :
To begin with, place the pan on the stove; keep the flame on medium mode. Pour Oil into the pan, wait until the oil gets hot. Add mustard seeds and let them splutter. Now add fenugreek seeds and fry until it turns brown, to this add curry leaves along with ginger garlic paste, sauté the ingredients and don't let the ingredients get burnt. Now lets add chopped onions and green chillies and fry till they turn light brown.
Once the onions are cooked, lets prepare the Masala for the recipe. Add a tsp of red chilly powder, a pinch of turmeric powder, two tsp of coriander powder and cumin seeds, sauté the spices and let it blend well with the rest of the ingredients. Now lets add chopped tomato meanwhile continue to sauté. Add tamarind extract along with two cups of water and a pinch of salt. Once the curry starts to boil, add 2-3 tbsp of sugar and gently mix. Finally add sliced boiled eggs and simmer for 2-3 minutes. Our Tamarind Egg Curry is ready to serve.
