Cooking Method :
Add 3-table spoons of oil in a vessel and warm it on medium heat. Add chopped okras, onions, green chilies and tomatoes into the pan, sauté and let it cook for some time. Once the veggies are cooked keep it aside.
Meanwhile continue to prepare the Masala combination for the curry. Heat Oil in a pan at medium flame, add mustard seeds and let it splutter. Add turmeric powder, Red chilly powder, Garam masala and coriander powder, keep sautéing till the oil separates. Add coconut milk. Keep sautéing, do not allow the coconut milk to curdle.
Once the curry boils, add the formerly cooked vegetables into it. Pour an uncooked raw egg in circular motion over the curry until it is spread evenly. Add curry leaves, let the curry boil for a few second more before switching off the stove. Your yummy Eggie Veg curry is ready to serve.
You can serve Eggie-Veg Curry as an accompaniment to Steamed oats cake for Breakfast or for Lunch.
