Cauliflower Curry

We are going to make a curry with cauliflower and tomato as the main ingredients. Both Cauliflower and tomato are excellent sources of vitamin C and other nutrients…

Ingredients :

   
Cauliflower - 1
Oil - 1-2tbsp
Turmeric powder - 1/2 tsp
Coriander powder - 1 tbsp
Tomato pulp (of 2-3 tomatoes) - 1 cup
Coconut flakes - 1cup
Ginger paste - 1 tbsp
Chillies chopped - 2-3 no
Pepper powder - 1 tsp
Garam masala - ¼ tsp
Salt - to taste

Cooking Method :

Pour some water into a pan on a stove, keep the flame at medium mode and let it boil. Add Cauliflower florets into the pan along with salt and turmeric powder and let it cook for a few minutes. Turmeric powder is known for its powerful antioxidant properties. Drain water and keep the cooked florets aside in a bowl.

Meanwhile place a shallow non-stick pan over the stove and keep the flame in medium mode. Pour some oil into the pan, add some Coriander powder and turmeric powder and keep sautéing. Now its time to add one of our main ingredients i.e tomato pulp, followed by finely ground coconut flakes, ginger paste, chopped chillies, salt and pepper powder. Continue to sauté the masala for sometime, till the oil separates. If you want gravy, add some water.

Add the formerly cooked cauliflower florets to the masala. We can finish off by adding Garam masala to get the Semi spicy taste, and finally check for salt and your cauliflower curry is ready to serve.
