Brinjal Pickle

Ingredients :    

Brinjal, medium size

- 4 nos

Chilly Powder

- 2 tbs

Medium size Tomatoes

- 3 nos

Oil

- 5 tbs

Tamarind

- 1 gooseberry size

Curry leaves

- 20 nos

Asafoetida

- 1/4 tsp

Turmeric powder

- 1/4 tsp
Salt - to taste

Method:

In a pan heat the oil and add chilly powder, turmeric powder, curry leaves and stir for few seconds.

Now add sliced brinjal, tomatoes and cook for 5 minutes. Add the extract of tamarind and stir, when it is cooked add asafoetida and salt, mix well.

While stirring the brinjal pieces should not be smashed.
