Cooking Method :
To begin with, let us fry a small quantity of thinly sliced mushrooms for tempering purpose. Add 2-3 tbsp of butter into the pan, to this add sliced mushrooms and stir-fry until the mushrooms have shrunk and darkened. Lets keep aside the fried mushroom and continue with the recipe.
Heat oil in the pan, add chopped onions along with thinly sliced garlic and continue sautéing until the onions turn translucent. Lets add thinly sliced fresh mushrooms along with chopped coriander leaves along with salt and continue sautéing. Now pour corn flour mixed with milk into the pan. Instead of milk you can use chicken stock for more flavour. Stir the soup until it thickens. You can add some water to reduce the soup's thickness.
Finally add pepper powder, formerly fried mushrooms and let the soup boil with the lid on, for 2 minutes. Your Mushroom soup is ready to serve.
