Oats based break fast is a healthy way to kick start a day. Oats veg soup is considered to be the best alternate to the usual Oats porridge. Oats cooked in Veg stock gives a special taste and flavor.

Ingredients :

Oil - 2 tbsp
Ginger - 1 tsp
Garlic - 1 tsp
Celery - 2-3 tbsp
Onions - ½ thinly chopped
Coriander - 1 sprig
Carrot - 2 tbsp
Soya sauce - 2-3 tbsp
Pepper - 1-2 tsp
Salt - 1 tsp
Lemon - 1 tbsp
Oats - 2 –3 tbsp
Water - 2 glasses

Cooking Method :

First we'll make vegetable stock. Pour some oil into a vessel on the stove; keep the flame at medium mode. Add thinly chopped ginger and garlic and keep sautéing; to this add chopped celery and thinly sliced onions and continue sautéing until onions turn translucent. Now its time to add chopped coriander along with grated carrot. Once the veggies are cooked you may add 2-3 tbsp of soya sauce along with salt and pepper powder to taste. Lets squeeze half of lemon on to the veggies and add 2 glasses of water and let it boil. Reduce heat and simmer for 10 minutes. Drain the stock from the vessel using a colander. Keep the vegetable stock aside. Mash the vegetable using the back of a spoon.

Cook oats in 3- 4 cup of water stirring continuously until it thickens. This will take around 3-4 minutes. Once the oats is properly cooked garnish the soup with coriander leaves and finally your oats Veg soup is ready to serve.

You can serve the delicious Oats and lemon coriander soup with crusty bread slices. It is a rejuvenating dish great for recouping from sickness.
